Strawberry Lavender Collins Cocktail

The Lavender Collins Cocktail brings together quintessential British countryside flavours with a dash of fizz

 Ingredients

Method

50ml Keepr's British Strawberry, Lavender & Honey Gin

25ml Lemon Juice

20ml Lavender Syrup (see below)

Sparkling Water

1-2 Strawberries

  • Add the lemon juice, lavender syrup, strawberries and gin to a shaker with a small handful or crushed ice and shake

  • Fill a hi-ball glass with cubed ice and pour the mixture over the top

  • Add sparkling water and garnish with a strawberry.

Lavender Syrup

In a small saucepan bring 1 cup of sugar and 1 cup of water to boil and then simmer for 3 minutes until the sugar has dissolved. Remove from the heat, add a few pieces of fresh washed lavender, cool completely and strain. Keep in a glass jar in the fridge for 7 days or freeze.
