Our barrels have a wonderful ‘from field to barrel’ story. The British Honey Company was launched in 2013 in the Cotswolds, Oxfordshire. Since then, expanding across Oxfordshire, with 40 hives at the privately owned, 3,000 acre, Tusmore Estate in Oxfordshire.
This year, our Award winning Master Distiller Jamie Baggott, has created a deliciously smooth New Make Spirit to be matured in ‘first fill’ Bourbon casks to produce a Single Estate Tusmore Whisky.
The Story begins at Tusmore, where Barley is grown in fields next to their apiary. The Barley is harvested and malted for the production of whisky. It is then transferred to our Partners Distillery in Ballykeefe, Kilkenny. Our Master Distiller, using his palate and experience produces the Award winning New Make Spirit. Ballykeefe Distillery is the most award winning new distillery in Irish history with the same new make spirit picking up a masters award at the Irish spirits business competition. Kilkenny has the first record of whisky production recorded in 1348 in the red book of Ossory that says even the black death didn’t stop distilling. In essence Kilkenny is therefore the birthplace of Whisky, and was the obvious choice to have a distillery built. The spirit is created using the traditional Irish, triple copper pot still method, being recognised for creating a deliciously smooth spirit. With an interest in the environment, the pot ale and the distillery grain that is left over after the production of the spirit is fed to the cattle at Ballykeefe, thus reducing waste. Finally, the spirit is returned to Oxford for storage.
All casks are different and all are treated as individuals. Under the watchful eye of our Master Distiller, each cask is sampled every three months. At three years, the Spirit has become a fully matured Whisky ready to enjoy or can be stored for longer. We recommend a 5-8 years.
Purchases of barrel is subject to The British Honey Companies standard Whisky production and storage terms & conditions agreement being signed, and a fee of £50 per annum for storage.
